Black Bean Summer Salad

Ingredients
- 1 15.5-ounce can black beans, drained and rinsed
- 1 8-ounce can corn, drained
- 1/2 cup bell pepper, chopped
- 1/4 cup onion, chopped
- 3 tablespoons fresh cilantro, chopped
- 1/4 cup balsamic vinegar
- 1 tablespoon apple cider vinegar
- 1 tablespoon oil
- 1/2 teaspoon salt
- 1/2 teaspoon brown sugar
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
Directions
- Combine the first 5 ingredients in a bowl.
- In a separate bowl, combine the remaining ingredients and mix well.
- Pour the vinegar and oil mixture over the first bowl and toss gently.
- Refrigerate until chilled and serve.
Recipe Tips
You can substitute two tablespoons of a prepared salad dressing such as Italian dressing for the vinegar, oil, and spices.
