Directions

  1. In a large bowl, stir together onions, peppers, rice, and beans.
  2. In a small bowl, blend together vinegar, dry mustard, garlic, salt, pepper, and vegetable oil.
  3. Pour dressing over bean mixture and stir to coat evenly.
  4. Chill for at least one hour. Serve.
