Three Bean Salad

Ingredients
- 2 cans green beans, drained
- 1 can kidney beans, drained and rinsed
- 1 can chickpea or black beans, drained and rinsed
- 1 small onion, chopped
- 1/4 cup vinegar
- 1 teaspoon sugar
- 2 teaspoons vegetable oil
- 1/4 teaspoon pepper
Directions
- In a large bowl, combine all beans and onions.
- In a small separate bowl, combine vinegar, sugar, oil and pepper.
- Pour over bean mixture and stir gently until the beans are coated.
- Cover and refrigerate overnight.
Recipe Tips
You can serve this salad immediately but it is best to let the salad sit in the refrigerator overnight to let the flavors meld.
