Spicy Pork and Sweet Potato Stew

Ingredients
- 2 teaspoon olive oil, divided
- 1 1/4 pounds pork tenderloin cut into bite sized pieces
- 1 medium onion, chopped
- 2 medium poblano peppers, seeded and diced
- 1 1/2 pounds sweet potatoes, peeled and cubed
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon cinnamon
- 1 14.5-ounce can chicken broth, low-sodium
- 1/2 cup water
- 1 cup corn, frozen
- 0.5 cup chipotle salsa
Directions
- Heat 1 teaspoon oil in soup pot over medium heat. Add pork and cook 7 minutes, stirring occasionally so all sides are browned. Remove from pan and keep warm.
- Add remaining oil to pot. Add onions, peppers, and sweet potatoes. Cover and cook for 3-5 minutes until they begin to soften.
- Add garlic, cumin and cinnamon to pot with vegetables. Stir until mixed well and fragrant, about 1 minute.
- Add water and broth and bring to a boil. Reduce heat to medium-low, add corn, cover, and cook 5 minutes.
- Add pork and salsa to pot. Cook until heated through. Serve hot.
Recipe Tips
Serve over rice.
Top with avocado or cilantro.
Try it vegetarian: Omit the pork and add 2 cans pinto beans, drained and rinsed well.
