Directions

  1. In a large skillet over medium heat, cook meat and onion about 8-10 minutes until meat is cooked.
  2. Drain juice and fat from cooked meat and onions.
  3. Add corn, tomatoes, taco seasoning, and rice.
  4. Simmer for 10 minutes.
  5. Add grated cheese to top; cover and let set for 5 minutes.

Use any type of ground meat in place of ground beef, such as turkey, chicken, or pork.
