Spicy Pork and Sweet Potato Stew

Ingredients
Instructions
  1. Heat 1 teaspoon oil in soup pot over medium heat. Add pork and cook 7 minutes, stirring occasionally so all sides are browned. Remove from pan and keep warm.
  2. Add remaining oil to pot. Add onions, peppers, and sweet potatoes. Cover and cook for 3-5 minutes until they begin to soften.
  3. Add garlic, cumin and cinnamon to pot with vegetables. Stir until mixed well and fragrant, about 1 minute.
  4. Add water and broth and bring to a boil. Reduce heat to medium-low, add corn, cover, and cook 5 minutes.
  5. Add pork and salsa to pot. Cook until heated through. Serve hot.
Recipe Notes

Serve over rice.

Top with avocado or cilantro.

Try it vegetarian: Omit the pork and add 2 cans pinto beans, drained and rinsed well.
