Southern Rice and Beans

Ingredients
- 1 cup beans, kidney, cooked
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 1 cup green pepper, chopped
- 1 cup rice, white, uncooked
- 2 cups water
- 1 3/4 cups tomatoes, chopped
- 1 14.5-ounce can corn, drained and rinsed
- 1 cup salsa
Directions
- In a large saucepan, cook onion and green pepper in oil for 5 minutes over medium heat.
- Add rice and stir until browned, about 5 minutes.
- Add water, tomatoes, corn, and salsa. Bring to a boil.
- Cover and reduce heat to low. Cook for 20 minutes.
- Stir in beans and heat for 5 minutes until heated through. Serve warm.
