Directions

  1. In a large skillet over medium high heat, add the vegetables and broth.
  2. Cook 8-15 minutes, depending how tender you like them, stirring occasionally. Add more broth as needed to keep the vegetables moist.
  3. Add the rice, canned beans and seasonings. Stir fry until heated through.

Alternatively, place vegetables and broth in a large microwave safe bowl and microwave on high heat for 5 minutes, or until tender.
