Ingredients
- 1/4 cup olive oil
- 1/3 cup balsamic vinegar
- 3 11-ounce cans corn, undrained
- 1 15-ounce can black beans, drained and rinsed
- 1 large red pepper, chopped
- 1 large green pepper, chopped
- 1 large red onion, chopped
- 1/4 cup fresh cilantro, chopped
Directions
- Mix all ingredients in a large bowl.
- Refrigerate several hours before serving to allow flavors to meld.
