Ham and Corn Casserole

  1. In a large skillet, heat olive oil over medium heat.
  2. Add peppers and onion whites to olive oil and saute 4-5 minutes until tender.
  3. Stir in corn, milk and pepper. Bring to a boil and then remove from heat.
  4. Stir in ham and potato flakes.
  5. Pour into a 9" casserole dish that has been lightly sprayed with vegetable spray.
  6. Sprinkle with cheese and green onion tops.
  7. Bake at 375ºF for 25 minutes until bubbly and an inserted thermometer reads 165°F for 15 seconds.

Recipe Tips

You can vary the recipe by adding peas or chopped broccoli in place of the green pepper.
