Directions

  1. Cut corn off the cob.
  2. Heat oil in a pan over medium heat. Add the onion and cook about 5 minutes until tender.
  3. Add pepper, carrots, and tomato to the pan and cook 3 minutes.
  4. Add corn to the skillet, mixing well, cooking for 5 minutes.
  5. Season with salt and pepper and enjoy!
