Ingredients
- 1 15-ounce can black beans, drained and rinsed
- 3/4 cup frozen corn, thawed
- 1 small red bell pepper, chopped
- 1 small Serrano chili, seeded and finely chopped (or jalapeno)
- 1/4 cup red onion, chopped
- 2 tablespoons white wine vinegar (or apple cider vinegar)
- 1 tablespoon vegetable oil
- 1/4 teaspoon salt
Directions
- Mix all ingredients in a bowl.
- Cover and refrigerate at least one hour before serving.

This salsa goes well with tortilla chips, chicken, or fish.
