  1. Preheat oven to 350 degrees F.
  2. In a bowl, mix together all dry ingredients except for the sugar. Set aside.
  3. In a large bowl, whisk the eggs, oil and sugar together until it lightens in color (it should be a fluffy, pale yellow). Slowly whisk in the milk.
  4. Fold in the dry ingredients until barely moist, then gently fold in the banana and apple. Do not over mix.
  5. Spoon the batter into a greased or paper-lined muffin tin. Bake for 25 minutes or until an inserted knife comes out clean.

Recipe Tips

You can substitute shredded pears for apples in this recipe.
