Oatmeal Banana Apple Muffins

Instructions
  1. Preheat oven to 350 degrees F.
  2. In a bowl, mix together all dry ingredients except for the sugar. Set aside.
  3. In a large bowl, whisk the eggs, oil and sugar together until it lightens in color (it should be a fluffy, pale yellow). Slowly whisk in the milk.
  4. Fold in the dry ingredients until barely moist, then gently fold in the banana and apple. Do not over mix.
  5. Spoon the batter into a greased or paper-lined muffin tin. Bake for 25 minutes or until an inserted knife comes out clean.
Recipe Notes

You can substitute shredded pears for apples in this recipe.

These make a quick snack or an easy breakfast on busy mornings.

Store muffins at room temperature for up to 2 days, refrigerate for up to 4 days, or freeze for up to 4 months.
