Oatmeal Banana Apple Muffins

Ingredients
- 1 1/2 cups rolled oats
- 1 cup whole wheat flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 2 large eggs
- 4 tablespoons vegetable oil
- 6 tablespoons sugar
- 2/3 cup milk
- 1 cup mashed banana (about 2)
- 1 cup grated apple (about 1 large)
Directions
- Preheat oven to 350 degrees F.
- In a bowl, mix together all dry ingredients except for the sugar. Set aside.
- In a large bowl, whisk the eggs, oil and sugar together until it lightens in color (it should be a fluffy, pale yellow). Slowly whisk in the milk.
- Fold in the dry ingredients until barely moist, then gently fold in the banana and apple. Do not over mix.
- Spoon the batter into a greased or paper-lined muffin tin. Bake for 25 minutes or until an inserted knife comes out clean.
Recipe Tips
You can substitute shredded pears for apples in this recipe.
