Slow Cooker Chicken and Sweet Potatoes

Directions

  1. In a large skillet, heat oil over medium-high heat. Sprinkle chicken with salt and pepper.
  2. Add chicken to the skillet and cook each side until browned, about 4 minutes each. Remove from heat.
  3. Coat slow cooker insert with non-stick spray. Place potatoes and onion into slow cooker, top with chicken.
  4. Sprinkle with thyme, cover, and cook on high heat for 2 1/2 hours.
  5. Add rice and water into crock pot. Re-cover and cook another 1 hour or until tender.

Recipe Tips

You can also use brown rice, just increase water to 1 1/2 cups.

Use chicken breasts in place of chicken thighs.
