Directions

  1. Season chicken thighs with salt and pepper. Heat oil in skillet over medium-high heat.
  2. Add chicken, skin side down, to skillet and cook until first side browned, about 7-9 minutes. Flip and cook another 3-5 minutes until second side is browned.
  3. Remove chicken and place on plate, cover to keep warm. Drain fat from skillet.
  4. Add the peppers, onion, and jalapeno to hot skillet. Cook until softened, about 3-4 minutes.
  5. Add oregano to peppers and onions, cook about 30 seconds until fragrant.
  6. Add rice, beans, corn, and water to the peppers and onions. Place chicken on top.
  7. Bring liquid to a boil. Cover, reduce heat to low, and simmer 15-20 minutes or until rice is tender.
  8. Top with cilantro and cheese. Serve with lime wedges.

Recipe Tips

Use any rice.  If substituting white rice for brown rice, increase water to 4 1/2 cups and increase simmer time to 25-30 minutes.

Try adding sliced avocado with the cheese and cilantro.

Make sure the chicken reaches an internal temperature of 165 degrees F.
