Lemony Kale and Potato Salad

Ingredients
- 1 bunch (3/4 lb) kale
- 1 tablespoon oil, divided
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 cup low sodium chicken stock or water
- 1 pound potatoes (about 4), washed and sliced
- 1/4 teaspoon salt
- 1 tablespoon lemon juice
Directions
- Wash kale, remove the stems and chop the leaves.
- In a large skillet, heat 1/2 tablespoon oil and saute the onions and garlic.
- Add the stock or water, kale, potatoes, and salt. Cover and simmer for about 15 minutes, or until cooked.
- Add 1/2 tablespoon of oil and lemon juice. Serve and refrigerate leftovers.
