Lemony Kale and Potato Salad

Instructions
  1. Wash kale, remove the stems and chop the leaves.
  2. In a large skillet, heat 1/2 tablespoon oil and saute the onions and garlic.
  3. Add the stock or water, kale, potatoes, and salt. Cover and simmer for about 15 minutes, or until cooked.
  4. Add 1/2 tablespoon of oil and lemon juice. Serve and refrigerate leftovers.
Recipe Notes

You can use any type of potato you have on-hand for this recipe.
