Bran-Peach Muffins

Adding peaches to these bran muffins makes them sweet and juicy! Store them in the refrigerator to keep them from getting too moist.

  1. Preheat oven to 400°F.
  2. In a medium bowl, combine cereal and milk; let soak for 3 minutes until milk is absorbed.
  3. Whisk in egg and oil.
  4. In another bowl, combine flour, sugar, baking powder, baking soda, cinnamon, lemon peel (optional) and salt.
  5. Add bran mixture, all at once, to flour mixture. Stir until just moistened and thick.
  6. Fold in peaches.
  7. Fill lightly greased muffin cups 2/3 full.
  8. Bake for 20-25 minutes.

Try mixing chopped nuts into the batter or sprinkling on top before baking.
