Sweet and Sour Cauliflower
Cauliflower's mild flavor makes it the perfect vehicle for seasonings and sauces. The sweet in this recipe is from a little sugar and dried fruit, while the sour comes from lemon and vinegar. Try this as a side dish or a topping for grain bowls or salads!

Ingredients
- 1 large cauliflower (or 2 small cauliflowers)
- 2 tablespoons olive oil
- 1 large onion, diced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon light brown sugar
- 1/4 cup dried cranberries (optional)
- 1/4 cup raisins (use 1/2 cup if not using cranberries)
- 1/2 teaspoon lemon zest
- 2 tablespoons lemon juice
- 2 tablespoons apple cider vinegar
- 1 tablespoon balsamic vinegar (optional)
Directions
- Cut the cauliflower into florets and slice each one to about 1/4 inch thick.
- In a large pot, heat olive oil over medium high. Add onions and cook, stirring, until softened and begin to turn golden, 5 to 8 minutes.
- Add cauliflower, salt and pepper, and cook for 2 to 3 minutes, uncovered, stirring frequently.
- Add brown sugar, cranberries (if using), raisins, lemon zest and juice, cider vinegar and balsamic vinegar (if using). Turn up the heat and cook, stirring occasionally, until cauliflower is tender, about 5 minutes more.
- Remove the pot from the heat, taste and adjust seasoning. Cover and allow to rest for at least 10 minutes before serving.
Recipe Tips
This can be made and refrigerated up to two days in advance.
Serve hot or at room temperature.
