Sweet and Sour Cauliflower

Instructions
  1. Cut the cauliflower into florets and slice each one to about 1/4 inch thick.
  2. In a large pot, heat olive oil over medium high. Add onions and cook, stirring, until softened and begin to turn golden, 5 to 8 minutes.
  3. Add cauliflower, salt and pepper, and cook for 2 to 3 minutes, uncovered, stirring frequently.
  4. Add brown sugar, cranberries (if using), raisins, lemon zest and juice, cider vinegar and balsamic vinegar (if using). Turn up the heat and cook, stirring occasionally, until cauliflower is tender, about 5 minutes more.
  5. Remove the pot from the heat, taste and adjust seasoning. Cover and allow to rest for at least 10 minutes before serving.
Recipe Notes

This can be made and refrigerated up to two days in advance.

Serve hot or at room temperature.
