White Chili

Ingredients
- 4 cups beans, white, cooked
- 1 tablespoon olive oil
- 2 red pepper, chopped
- 1 large onion, chopped
- 1 green chili, chopped (optional)
- 3 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin, ground
- 1 teaspoon oregano, dried
- 2 cups chicken broth, low-sodium
- 2 cups milk, low fat
- 1/4 cup cilantro, chopped
- 3/4 pound chicken breast, boneless and skinless, chopped
- 6 tortillas, corn
Directions
- Heat oil in soup pot over medium high heat. Add peppers and onion and cook 5 minutes until soft.
- Add green chili, garlic, spices and chicken broth. Simmer for 20 minutes.
- Add milk, cooked beans, and cooked chicken. Allow to thicken, about 10 minutes, before adding cilantro. Heat through.
- Top chili with crisp tortillas before serving.
Recipe Tips
Top with avocado slices, diced tomatoes or salsa, and/or greek yogurt.
