Spicy Curry Turkey Soup
Ground turkey is a good substitute for other ground meat, and this soup is a hearty and healthy meal.

Ingredients
- 1 tablespoon olive oil
- 1 pound turkey, ground
- 1 cup onion, chopped
- 1 cup celery, diced
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 2 tablespoons all purpose-flour
- 3/4 tablespoon curry powder
- 4 cups chicken broth, low-sodium
- 2 cups carrots, chopped
- 3 red potatoes, diced
- 2 cups spinach, chopped
Directions
- Heat the olive oil in a large pot over medium heat. Add the turkey and cook until no longer pink, about 5 minutes. Add onion and celery and cook for about 7 minutes, stirring occasionally. Sprinkle with salt. and pepper.
- Stir in flour and curry powder and cook for 2-3 minutes, stirring constantly.
- Pour in chicken broth and scrape up any brown bits at the bottom of the pan.
- Bring to a simmer and add carrots and potatoes. Bring to a boil.
- Reduce the heat to simmer and cover, cook for about 15 minutes or until carrots and potatoes are soft. Stir in spinach and serve.
Recipe Tips
Use ground chicken or pork in place of ground turkey.
Garnish with chopped parsley or cilantro.
