Bran-Peach Muffins
Adding peaches to these bran muffins makes them sweet and juicy! Store them in the refrigerator to keep them from getting too moist.

Ingredients
- 1 1/2 cups whole bran cereal
- 1 cup low fat milk
- 1 large egg, beaten
- 1/4 cup vegetable oil
- 1 cup flour
- 1/4 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/2 teaspoon grated lemon peel (optional)
- 1/4 teaspoon salt
- 1 1/2 cups peaches, canned, diced and drained
Directions
- Preheat oven to 400°F.
- In a medium bowl, combine cereal and milk; let soak for 3 minutes until milk is absorbed.
- Whisk in egg and oil.
- In another bowl, combine flour, sugar, baking powder, baking soda, cinnamon, lemon peel (optional) and salt.
- Add bran mixture, all at once, to flour mixture. Stir until just moistened and thick.
- Fold in peaches.
- Fill lightly greased muffin cups 2/3 full.
- Bake for 20-25 minutes.
Recipe Tips
Try mixing chopped nuts into the batter or sprinkling on top before baking.
