White Chickpea Chili

  1. In a large pot, heat the olive oil over high heat.
  2. Add the onion and cook until tender, about 5 minutes.
  3. Add the garlic and cook for an additional 2-3 minutes.
  4. Stir in the white beans, chickpeas, salsa verde, vegetable broth, cumin, chili powder, oregano, cilantro, and fresh lime juice.
  5. Season with salt and black pepper, to taste.
  6. Simmer chili on low for about 15-20 minutes.
  7. Ladle chili into bowls and serve warm.
  8. Garnish with toppings of your choice!

Recipe Tips

This soup recipe has a lot of room for experimentation. Try adding a can of diced tomatoes or a can of green chilis! It's also a great way to use leftover chicken or turkey.
