Sweet and Sour Chicken Thighs

Ingredients
- 2 pounds chicken thighs, bone-in trimmed of excess fat
- 1 teaspoon salt
- 1 1/4 teaspoons paprika
- 3/4 teaspoon cinnamon
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 large onion, sliced
- 1 pound carrots, sliced into 1" pieces
- 4 cloves garlic, minced
- 1/2 cup water
- 1/4 cup lemon juice
- 1 tablespoon honey
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon cilantro, chopped
Directions
- Pat chicken dry with paper towels.
- Combine salt, paprika, cinnamon, and black pepper in a small bowl. Rub over chicken.
- Heat oil in a large skillet over medium-high heat until hot.
- Add half of the chicken, and cook about 4-5 minutes per side until done. Remove and set aside. Cook other half of chicken.
- Discard all but 3 tablespoons liquid from the skillet. Add the onions and carrots to hot skillet.
- Cook over moderate heat until onions soften and begin to brown, about 8 minutes.
- Add garlic and cook until fragrant, about 30 seconds.
- Return chicken to skillet. Mix together water, lemon juice, and honey in a small bowl and add to skillet.
- Cover and reduce heat to medium-low. Cook additional 25 minutes or until vegetables are tender and chicken is cooked.
- Sprinkle with herbs and serve warm.
Recipe Tips
Use 1 teaspoon of dried parsley and coriander in place of fresh herbs.
Serve over rotini, spaghetti, or rice.
Chicken should reach an internal temperature of 165 degrees F.
