  1. Pat chicken dry with paper towels.
  2. Combine salt, paprika, cinnamon, and black pepper in a small bowl. Rub over chicken.
  3. Heat oil in a large skillet over medium-high heat until hot.
  4. Add half of the chicken, and cook about 4-5 minutes per side until done. Remove and set aside. Cook other half of chicken.
  5. Discard all but 3 tablespoons liquid from the skillet. Add the onions and carrots to hot skillet.
  6. Cook over moderate heat until onions soften and begin to brown, about 8 minutes.
  7. Add garlic and cook until fragrant, about 30 seconds.
  8. Return chicken to skillet. Mix together water, lemon juice, and honey in a small bowl and add to skillet.
  9. Cover and reduce heat to medium-low. Cook additional 25 minutes or until vegetables are tender and chicken is cooked.
  10. Sprinkle with herbs and serve warm.

Recipe Tips

Use 1 teaspoon of dried parsley and coriander in place of fresh herbs.

Serve over rotini, spaghetti, or rice.

Chicken should reach an internal temperature of 165 degrees F.
