Salmon with Lemon Dill Sauce

Ingredients
- Cooking Spray
- 2 tablespoons greek yogurt, plain
- 2 tablespoons mayonnaise
- 1/2 teaspoon dried dill
- 1 1/2 teaspoons lemon juice
- 1/2 teaspoon garlic, minced
- 4 4-ounce salmon fillets
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups brown rice, cooked
- 1 pound broccoli, lightly steamed
Directions
- Preheat broiler. Grease broiler pan with cooking spray.
- Combine yogurt, mayonnaise, dill, lemon juice and garlic in a small bowl. Mix well. Set in the refrigerator for flavors to combine.
- Arrange fish, skin side down, on broiler pan. Sprinkle with salt and pepper.
- Broil fish for 7 minutes, or until flakes easily with fork.
- Serve fish over rice topped with the dill sauce and broccoli.

Use any vegetables desired, such as peppers, onions, cauliflower, brussels sprouts, and/or asparagus.
Use any type of grain to serve over, such as rice, farro, or barley.
