Pozole Soup

Pozole (pronounced po-ZOH-lay) is a traditional Mexican soup that includes hominy. This one calls for ground meat, but you can add canned or roasted meat instead.

Directions

  1. In a large pot, heat oil over medium high heat. Saute beef 5-7 minutes until browned. Add onions and garlic and cook another 3-5 minutes.
  2. Add salt, pepper, and water. Cover the pot and bring to a simmer.
  3. Add tomatoes and hominy and continue cooking for about 10 minutes, stirring occasionally.
  4. Top each serving with cilantro.

Recipe Tips

You can use drained canned chicken or pork,  instead of ground meat.

Make this a vegetarian meal by swapping out the meat for a can of pinto or white beans, drained and rinsed.

Pozole is traditionally topped with cabbage, avocado, radish, cilantro, and a squeeze of lime.
