Pozole Soup
Pozole (pronounced po-ZOH-lay) is a traditional Mexican soup that includes hominy. This one calls for ground meat, but you can add canned or roasted meat instead.

Ingredients
- 1 pound beef, ground, 90% lean (or ground turkey, chicken or pork) See Recipe Tips
- 1 tablespoon olive oil
- 1 medium onion, diced
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 6 cups water (or low sodium broth)
- 1 14.5-ounce can diced tomatoes, low sodium (or stewed tomatoes)
- 1 14.5-ounce can hominy, drained and rinsed
- 1/4 cup cilantro, chopped
Directions
- In a large pot, heat oil over medium high heat. Saute beef 5-7 minutes until browned. Add onions and garlic and cook another 3-5 minutes.
- Add salt, pepper, and water. Cover the pot and bring to a simmer.
- Add tomatoes and hominy and continue cooking for about 10 minutes, stirring occasionally.
- Top each serving with cilantro.
Recipe Tips
You can use drained canned chicken or pork, instead of ground meat.
Make this a vegetarian meal by swapping out the meat for a can of pinto or white beans, drained and rinsed.
Pozole is traditionally topped with cabbage, avocado, radish, cilantro, and a squeeze of lime.
