Herb Potato Salad

Ingredients
- 1/2 teaspoon salt
- 5 small potatoes, quartered
- 3 tablespoons yogurt, non-fat, plain
- 1 tablespoon mayonnaise, light
- 1 1/2 teaspoons prepared mustard
- 1 clove garlic, minced
- 1/4 teaspoon onion powder
- 2 small radishes, sliced (optional)
- 1/2 teaspoon basil, dried
- 1/4 teaspoon thyme, dried
Directions
- Place potatoes in medium saucepan with salt and cover with water. Bring to a boil.
- Cover, reduce heat and simmer 12 minutes or until potatoes are done. Drain.
- Mix yogurt, mayonnaise, mustard, garlic, and onion powder together.
- Combine hot potatoes, dressing, radishes, basil, and thyme. Serve hot or cold.
Recipe Tips
Use Greek yogurt in place of mayonnaise.
