Carrot Spice Muffins
Carrots and applesauce add veggies and fruit to this spicy breakfast favorite.

Ingredients
- 2 large eggs
- 1/2 cup unsweetened applesauce
- 2 tablespoons vegetable oil
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups shredded carrots
- 1 cup flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup walnuts, chopped (optional)
Directions
- Preheat oven to 350°F. Coat 12 muffin cups with vegetable cooking spray.
- In a large bowl, mix eggs, applesauce, oil, sugar, and vanilla until completely combined. Stir in carrots.
- In another bowl, whisk together flour, baking soda, cinnamon and salt. Add the flour mixture to the wet mixture and stir until all of the flour is wet.
- Portion the mixture evenly into the muffin cups. Bake for 25-30 minutes. You can check if they're done by inserting a toothpick or knife into the middle of one - if it comes out clean (very little crumbs), they're ready.
- Allow to cool for 10 minutes, then remove muffins from tin and cool on a wire rack or plate.
Recipe Tips
Swap carrots for shredded zucchini, or try a 50/50 mix of both!
Using applesauce helps reduce the amount of fat while keeping the muffins moist.
