Directions

  1. Preheat oven to 375° F.
  2. Place almonds in a food processor and grind until fine but not a paste.
  3. Transfer almonds to a small saucepan and add milk; bring to a simmer over medium-low heat.
  4. Remove mixture from heat and let almonds soak for about 30 minutes. Pour through a strainer, into a bowl.
  5. Spray a 10 inch pie dish or 8x8 pan with cooking spray. Sprinkle with 1 tablespoon sugar then place cherries on top of sugar.
  6. In a medium bowl beat eggs, almond extract, salt and remaining 1/2 cup sugar until well blended. Add strained almond milk and beat to blend.
  7. Add flour to the egg mixture and beat until smooth. Pour mixture over cherries.
  8. Bake until set and knife inserted into center comes out clean, about 30 minutes. Cool completely. Sprinkle clafouti with powdered sugar (if desired) and serve.

Recipe Tips

If you don't have a food processor, place the almonds in a sealable plastic bag and crush them by rolling a rolling pin or full vegetable can over them.
