Black Beans and Rice

Ingredients
- 1 teaspoon vegetable oil
- 3 cloves garlic, minced
- 1 cup onion, chopped
- 1 cup green pepper, diced
- 2 15-ounce cans beans, black, low sodium, drained and rinsed
- 2 cups chicken broth, low-sodium
- 1 tablespoon white vinegar
- 1/2 teaspoon oregano
- 3 cups rice, cooked
- 1/2 teaspoon black pepper
Directions
- In a large skillet, heat oil and cook garlic, onions, and green peppers for about 3 minutes.
- Stir in the beans, broth, vinegar, and seasonings and bring to a boil.
- Reduce heat and cover. Cook on low heat for 5 minutes.
- Spoon over cooked rice and serve.
