Summer Salad
Crispy, cool vegetables are a perfect side dish when the weather warms up.

Ingredients
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- 3 medium apples
- 2 medium green peppers
- 3 medium tomatoes
- 2 medium cucumbers
- 1/2 teaspoon black pepper (optional)
Directions
- In a large bowl, combine oil and lemon juice.
- Dice all the fruits and vegetables and then add to the bowl. Stir to combine.
- Put in the refrigerator until ready to serve. Serve cold.
- Best served within 24 hours.
Recipe Tips
Make this a meal by adding one can of drained, rinsed, chickpeas or white beans.
This is best eaten within 2 days.
