Whole Grain Cornbread
Did you know corn is a whole grain? This recipe also uses whole wheat flour so you don't miss out on the fiber and vitamins whole grains have to offer.

Ingredients
- 3/4 cup whole wheat flour
- 3/4 cup yellow cornmeal
- 3 tablespoons Parmesan cheese
- 2 teaspoons chili powder
- 1 teaspoon salt
- 3/4 cup + 2 tablespoons milk, low fat
- 2 tablespoons oil
- 2 tablespoons honey
- 1 large egg
- 1 cup canned corn, drained
Directions
- Preheat oven to 425°F.
- In a medium bowl, combine flour, cornmeal, cheese, chili powder, and salt.
- In a separate bowl, whisk milk, oil, honey, and egg until combined. Add to dry ingredients.
- Mix until well blended. Add corn. Mix well again.
- Spoon batter into greased muffin pans or loaf pans.
- Bake for 18 minutes or until lightly browned.
- Cool on wire racks.
Recipe Tips
To reduce the fat content substitute applesauce for all of the oil.
