Tuscan White Bean Pasta

Ingredients
- 8 ounces linguini, uncooked
- 1 teaspoon olive oil
- 1 tablespoon butter, unsalted
- 3 cloves garlic, minced
- 1 pint grape tomatoes, halved
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon basil, dried
- 1 15-ounce can cannellini beans, drained and rinsed
- 1 bunch baby spinach, chopped
- 3 ounces Parmesan cheese, grated
Directions
- Prepare pasta according to directions for al dente. Drain and set aside.
- In a large skillet, heat the oil and butter over medium heat. Add the garlic and cook until fragrant, about 30-60 seconds.
- Add tomatoes, salt, pepper, and basil to the skillet. Cook 1-2 minutes.
- Add beans and simmer 7-10 minutes until tomatoes have softened.
- Add the spinach, reduce heat to low and stir until wilted, about 3-5 minutes.
- Add drained pasta to skillet and mix together. Top with cheese and serve warm.
