Pork Chops with Lemon Spinach

Ingredients
- 3 tablespoons all purpose-flour
- 1/2 teaspoon salt
- 1/8 teaspoon ground red pepper (optional)
- 4 4-ounce pork chops
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 2 teaspoons lemon juice
- 1 10-ounce package spinach, rinsed well
Directions
- Combine flour, salt, and red pepper in a shallow dish. Coat each side of the chops and set aside.
- Heat oil in a large skillet over medium-high heat.
- Add pork chops and cook 5 minutes on each side, until cooked through. Remove from pan and keep warm.
- Add garlic to pan and cook until fragrant, about 30 seconds.
- Stir broth and lemon juice into skillet, scraping browned bits from the pan. Cook 1 minute.
- Add spinach to skillet, tossing until combined. Cook 2-3 minutes until just wilted.
- Serve spinach over pork.

Serve over cooked rice.
Cook pork chops to internal temperature of 145 degrees F.
