Chicken Pie with Carrots

This hearty baked chicken dish is rich in potassium and is an excellent source of protein that will keep you full and satisfied.

  1. Preheat oven to 350 degrees F.
  2. Mix together grated carrots, potatoes and melted butter in a medium bowl. Set aside.
  3. Place chicken, peas, cooked orzo, cream, and water in pie dish and mix well.
  4. Spoon carrot/potato mixture over the chicken mixture.
  5. Bake for 45-50 minutes, until the top is golden. Serve warm.

Recipe Tips

Add 1 medium, diced onion or 8 ounces chopped mushrooms to the chicken mixture for extra vegetables.

Use any type of chicken, such as thighs or legs.
