Directions

  1. Spray baking dish with cooking spray. Preheat oven to 400ºF.
  2. Rinse fillets, pat dry.
  3. Combine Parmesan, cornmeal, flour, pepper, and paprika in a plastic bag. Add fillets one at a time to the bag and shake well to coat.
  4. Place fillets in baking dish. Drizzle oil over them.
  5. Bake about 10 minutes on each side, or until fish flakes easily.
