  1. Preheat grill to high heat or preheat oven to 425F.
  2. Make the yogurt sauce: in a separate bowl, combine yogurt, garlic, lemon juice, and salt. Set aside in the fridge
  3. In a food processor or blender, add the onion, garlic, and parsley. Pulse until coarsely chopped.
  4. In a medium bowl combine ground beef meat, chopped vegetables, and spices.
  5. For the skewers, divide and roll the meat into a golf ball-sized meatball.
  6. place 2-3 meatballs on each skewer, and spread to cover the skewers.
  7. For the oven: line baking tray with aluminum foil and place a rack on top. add the kebabs and bake for 10 minutes on one side. Flip the kebabs and bake for another 10 minutes.
  8. If grilling, place kebabs on the grill and cook for about 4 minutes each side.
  9. Serve beef kebabs on pita bread along with yogurt sauce and toppings.
