Ground Beef Kebabs

Ingredients
- Kebabs
- 10 wooden skewers soaked in water for 30 minutes
- 2 lbs ground beef
- 1 medium onion peeled, quartered
- 4 cloves garlic peeled and crushed
- 1/2 bunch Fresh parsley
- 1 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp paprika
- 1 tsp sumac
- pita bread for serving
- grilled vegetables for serving (optional)
- sumac onions for serving (optional)
- Yogurt Sauce
- 1/2 cup greek yogurt
- 1 clove garlic minced
- 1 tsp lemon juice
- 1/8 tsp salt
Directions
- Preheat grill to high heat or preheat oven to 425F.
- Make the yogurt sauce: in a separate bowl, combine yogurt, garlic, lemon juice, and salt. Set aside in the fridge
- In a food processor or blender, add the onion, garlic, and parsley. Pulse until coarsely chopped.
- In a medium bowl combine ground beef meat, chopped vegetables, and spices.
- For the skewers, divide and roll the meat into a golf ball-sized meatball.
- place 2-3 meatballs on each skewer, and spread to cover the skewers.
- For the oven: line baking tray with aluminum foil and place a rack on top. add the kebabs and bake for 10 minutes on one side. Flip the kebabs and bake for another 10 minutes.
- If grilling, place kebabs on the grill and cook for about 4 minutes each side.
- Serve beef kebabs on pita bread along with yogurt sauce and toppings.
