Dressed-Up Corn
Enjoy this summer medley over fish or chicken or as a side dish at a potluck!

Ingredients
- 4 ears of corn (or 3 cups frozen corn)
- 1 medium green pepper, sliced
- 1 large tomato, diced
- 1 medium onion, chopped
- 3 medium carrots, sliced
- 1 teaspoon oil
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
Directions
- Cut corn off the cob.
- Heat oil in a pan over medium heat. Add the onion and cook about 5 minutes until tender.
- Add pepper, carrots, and tomato to the pan and cook 3 minutes.
- Add corn to the skillet, mixing well, cooking for 5 minutes.
- Season with salt and pepper and enjoy!
