Ingredients
- Cooking Spray
- 2 cups cereal, crushed (oat or wheat)
- 1 1/4 cups flour
- 1/3 cup packed brown sugar
- 1 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1 cup banana, mashed (2-3 medium)
- 2/3 cup milk, low fat
- 3 tablespoons oil
- 1 large egg
Directions
- Heat oven to 400°F.
- Spray 12 regular-sized muffin cups with cooking spray.
- Mix cereal, flour, brown sugar, baking powder, and baking soda in a large bowl.
- Add banana, milk, oil, and egg.
- Stir until moistened.
- Evenly pour the batter into the twelve muffin cups.
- Bake 18-22 minutes until golden brown or until a knife inserted into the center of one comes out clean.
