Slow Cooker Split Pea and Sweet Potato Soup
Split peas make this a perfect hearty soup for cool nights.

Ingredients
- 1 medium onion diced
- 4 medium carrots sliced
- 4 stalks celery sliced
- 4 cloves garlic minced
- 2 medium sweet potato peeled and cut into 1-inch cubes
- 3 cups yellow split peas picked over (look for stones!) and rinsed
- 1 4 ounce Kielbasa sausage sliced into coins (or try chorizo)
- 2 32 oz. cartons low-sodium chicken broth or vegetable broth
- 1 tablespoon curry powder
- 1 tablespoon cumin
- 1 teaspoon ginger ground
Directions
- In a slow cooker, add onions, carrots, celery, garlic, sweet potatoes, and split peas. Cover with broth. Add spices.
- Cook on high 4-6 hours until sweet potatoes are tender & soup reaches a thick consistency. If needed, cook an additional hour.
Recipe Tips
Stove top instructions:
1. Heat 1 tablespoon olive or vegetable oil in a large pot over medium heat.
2. Add onion, carrot, celery, and garlic and saute until vegetables begin to sweat, about 5 minutes.
3. Add sweet potato, split peas, sausage, broth, and spices.
4. Bring to a boil, then reduce heat and simmer until peas are tender, about 40 minutes.
