Farmers Market Salsa
Who says salads have to be boring? Try this mixed bean and vegetable salad as a side dish or a meal.

Ingredients
- 1/2 cup corn, frozen
- 1 15-ounce can beans, black, drained and rinsed
- 1 cup tomatoes, diced
- 1/2 cup onion, diced
- 1/2 cup green pepper, diced
- 2 tablespoons lime juice
- 2 cloves garlic, minced
- 1/2 cup cilantro, washed and chopped (optional)
Directions
- Combine all ingredients in a large bowl. Chill at least 2 hours before serving.
Recipe Tips
Allowing the salsa to chill before serving blends the flavors together, but you can serve immediately.
Use as a topping, or serve as an appetizer with favorite chips.
For extra spice swap the green pepper for half a jalapeño, minced.
