Applesauce Pancakes

These pancakes have protein from the eggs and can be a whole-grain if you swap the all-purpose flour for whole wheat.

Directions

  1. In a medium mixing bowl, combine applesauce, dry milk powder, water, eggs, and oil.
  2. Add flour, sugar, cinnamon, and baking powder.
  3. Stir until mixture has only small lumps.
  4. Place large skillet on medium-high heat. Coat with nonstick spray.
  5. Pour 1/2 cup batter onto skillet.
  6. Turn pancake when bubbles form on top of batter.
  7. Cook the other side for about 1 minute or until golden brown.

Recipe Tips

Top with nuts, fruit, and powdered sugar.
