Zucchini Burgers

Ingredients
- 2 cups zucchini, grated, pressed to remove water
- 2 eggs, lightly beaten
- 1/2 cup feta cheese, low-fat, crumbled
- 1/4 cup red pepper, diced
- 1/2 cup chickpeas, drained and rinsed, mashed
- 1/4 cup green onion, chopped
- 1 clove garlic, minced
- 1/2 cup bread crumbs, plain
- 1/4 cup parsley, chopped
- 1/4 cup olive oil
- 6 tablespoons hot marinara sauce
- 6 hamburger buns, whole wheat
- 2 tomatoes, sliced
- 5 ounces lettuce or mixed baby greens
Directions
- To remove water from shredded zucchini, place it on a clean dish towel and tightly squeeze it over the sink.
- In a large mixing bowl, combine zucchini, eggs, feta, red pepper, chickpeas, green onion, garlic, breadcrumbs, and parsley. Mix well.
- Form mixture into 6 even patties with your hands.
- Heat olive oil in a large nonstick skillet over medium heat. Cook the patties, about 4 minutes per side, or until golden brown on each side and heated through.
- Place the patties on the buns and top each with 1 tablespoon marinara sauce. Top with tomato slices and lettuce.
Recipe Tips
You can bake these in the oven instead of stove top. Heat the oven to 425 degrees and place patties on an oiled pan. Bake for 10 minutes, flip them over and bake for another 5-7 minutes.
