Calabacitas (kahl-ah-ba-SEE-tas) translates to "little squash" in English. It is often served as a side dish, but can easily be a meal in itself.

Directions

  1. Heat oil in a large skillet over medium heat.
  2. Add onion and cook for 3-5 minutes.
  3. Add all other vegetables and saute until vegetables are firm, but tender.
  4. Remove vegetables from heat.
  5. Sprinkle cheese over vegetables, mix throughout, and allow cheese to melt.

Recipe Tips

Make it a meal by serving over rice or with flour tortillas.

Add some protein by draining and rinsing one can of pinto, white, or kidney beans.
