Zucchini Au Gratin

Ingredients
- 4 cups zucchini, thinly sliced
- 1/2 cup onion, sliced
- 2 tablespoons water
- 1 tablespoon margarine
- 1/4 teaspoon black pepper
- 3 tablespoons Parmesan cheese, grated
Directions
- Heat a frying pan over medium. Add zucchini, onion, water, margarine, and pepper and cover for 1 minute.
- Remove cover and cook until crisp-tender, about 7 minutes.
- Turn with large spoon to cook evenly.
- Sprinkle with cheese; toss lightly. Serve.
Recipe Tips
Use summer squash or eggplant in place of zucchini.
