Instructions
  1. Heat a frying pan over medium. Add zucchini, onion, water, margarine, and pepper and cover for 1 minute.
  2. Remove cover and cook until crisp-tender, about 7 minutes.
  3. Turn with large spoon to cook evenly.
  4. Sprinkle with cheese; toss lightly. Serve.
Recipe Notes

Use summer squash or eggplant in place of zucchini.
